Since opening to great fanfare in February 2001, Bistro Toujours was designed to complement the decor of a true European Chateau with breathtaking views of the snow-capped mountains from almost every seat. Under the culinary direction of Chef Kratky, Bistro Toujours will continue to celebrate the festive food, wines and warm hospitality of France's classic bistros, while turning out an evolving seasonal menu. Highlighting the winter menu are regional specialties such as the tenderloin of elk Wellington with forestiere Pate with wild mushroom duxelles, Napoleon of leeks and red bliss potatoes, organic baby carrots beurre noissete and red currant infused elk demi glace. In addition, the menu offers a wonderful selection of creative entrees, including seafood a la Cauderan, featuring king salmon with savory clams, mussels, shrimp, jumbo lump crab, Chardonnay broth enriched with prosciutto di Parma and served with a batonnet of vegetables.
The restaurant bar, Buvez!, recognized as the area's "Best Hotel Bar" by Salt Lake Magazine, offers a sumptuous pre- and post-dining retreat with views of the mountain, live entertainment and apres ski celebrations.
