The New York Palace Hotel Announces Impending Arrival of Gilt

- Gilt to Present Breakthrough Dining Experience in Hotel’s Historic Villard Mansion –

NEW YORK, Oct. 5 /PRNewswire/ — The New York Palace Hotel, a renowned landmark luxury property located in the heart of midtown Manhattan at 50th and Madison, today announced plans for the development of a new restaurant and bar. Later this fall, a new dining experience will be unveiled with the arrival of Gilt at The New York Palace. With an evocative menu of contemporary cuisine created by acclaimed chef Paul Liebrandt, Gilt will be located just beyond the wrought iron gates of The Palace Courtyard. Defined by Webster’s as a thin layer of gold, the name Gilt pays tribute to The Gilded Age of the late nineteenth century, a period of time in American history in which many great fortunes were born. One such fortune, that of Pennsylvania railroad magnate Henry Villard, resulted in the creation of The Villard Mansion in 1882. The historic landmark has served as the grand entranceway to The New York Palace Hotel’s 55-story tower since the fall of 1980. Fully honoring The Mansion’s role in The Gilded Age, Gilt will boldly complement the opulent walls and cathedral ceilings of the interior landmark rooms with a revolutionary design concept by one of France’s greatest new interior talents, Patrick Jouin.

“Having long enjoyed the reputation for having a world-class restaurant on premises, we are proud to welcome Gilt to The New York Palace Hotel,” said John L. Segreti, Managing Director of The New York Palace Hotel. “We are confident that Gilt will prove to be a worthy resident of The Villard Mansion and we look forward to offering this extraordinary experience to our guests.”

Gilt will feature a selection of wines by the glass that is among America’s most elaborate. With a stunning visual display of the great vintages of the world, Gilt’s commitment to wine will be clearly evident to all that enter.

The wine list of Gilt will serve to highlight an avant-garde, cross-cultural menu that is devoted to the principles of spontaneity and diversity. Chef Liebrandt’s “menus within the menu” concept will make it possible for many dishes to change daily, while the American classics remain.

“My goal is to take contemporary cuisine to an unprecedented level by evoking emotional experiences that leave the guests of Gilt with unforgettable impressions throughout their meal,” said Chef Liebrandt. “Over the course of my career, I have been fine-tuning the necessary approach to cooking in order to successfully execute and deliver on such an ambitious undertaking.”

Gilt will provide an unforgettable atmosphere to match the innovative menu. The design of the dining room and bar have been conceived by Patrick Jouin to represent the contrast in different eras of past and present, aligned amidst the history of this classic landmark residence. The concept for Gilt’s 62-seat dining room aims to provide guests with a feeling of being simultaneously comforted by the future and inspired by the past. The design for the bar has been conceived to exude a sense of intimacy and warmth within the sleek and ultramodern structure being built for the space.
